2025-05-31 – Kransekake (In-Person)

This is an in-person class held at Vesterheim Folk Art School.
Kransekake, the “Queen of Norwegian cakes,” is a traditional Norwegian almond-based delicacy. In this hands-on class, students will make the kransekake from start to finish, from preparing the forms/pans to mixing and forming the dough into graduated-sized rings to baking. Once cooled, students will then decorate each individual ring with royal icing while carefully stacking them into a tower of rings.
The finished kransekake will be ready to take its honorary place at the center of any celebration, whether for a wedding, confirmation, or the biggest day of all – Syttende Mai – the 17th of May (Norway’s Constitution Day).
Students will not only have a complete hands-on experience in preparing the kransekake, but also learn some very interesting history on the origin of the kransekake and some centuries-old alternatives to the kransekake. The correct way to serve kransekake will also be demonstrated.
