Description
When winter is at its coldest, Scandinavians turn to simple, nourishing meals that bring warmth and comfort to the table. In this online cook-along class, Kristi will prepare a complete Nordic-inspired meal featuring Finnish salmon soup (lohikeitto), a creamy and satisfying soup flavored with potatoes, dill, and salmon; a bright Scandinavian carrot salad with lemon and fresh herbs; and a simple apple compote topped with cardamom whipped cream for dessert.
Along the way, we'll explore the ingredients and traditions that make Nordic comfort food so appealing, from hearty root vegetables and fresh herbs to simple preparations that let quality ingredients shine. These approachable recipes are perfect for busy weeknights, yet special enough to share with family and friends.
Students will cook along from their own kitchens and leave with a collection of comforting recipes, practical cooking tips, and a deeper appreciation for the simple pleasures of Scandinavian home cooking.
This Vesterheim cooking class is designed as a small-group cook-along, and we invite exchange between the instructor and students in order to build community around food traditions. In this same spirit of sharing, we invite the whole family to experience this collaborative cooking and learning process. Only one registration is needed per household.
Supplies
Recipes will be sent to you approximately one week prior to class. Students will need to provide ingredients for the recipes.
Additional Supplies
Students will need to provide a computer, laptop, or tablet with a camera and mic as well as a fast, reliable internet connection.

You will receive links to the Zoom sessions by email sometime during the week prior to the class.
