I have this book titled AUTHENTIC NORWEGIAN COOKING by Astric Carlson Scott and I want to comment about the recipe for QUICK POTATO LEFSE on page 114. Something seems to be very wrong about the water content in the ingredients. Astrid says "You will feel good about your efforts from your very first try." No---I was feeling the opposite, as needed this recipe to teach a bunch of yhoung men how to make lefse with dehydrated (instant) potatoes. We use the McCain brand made by McCaine Foods (Canada) in Florenceville, New Brunswich and have good luck when we make 400 lefse from one bag--but using this smaller recipe of Astrid's has been a disaster. There is not enough boiling water!!! Please contact the author and advise me, or advise me if you know the solution to our problem.
I feel just rotten as have sold this book a hundred times and directed many would-be lefse makers to the recipe in question--only to find out IT DOESN'T WORK! I will await your reply. Tusen takk!
